A good powerful backstab build is mainly used for fighing ganks, cause in order to beat them you cant slowly drain their health. They always heal. So you need to be able to oneshot, get them in a chain, or with one bs and one normal hit before they have time to heal.

Lower your equip load enough to fast roll. You should get the chloranthy ring and grass crest shield for stamina regen. Equip ceastus or other parry shield for knights. When I use 2hd weapons I poise hits and trade, should try to keep the med roll at least though, as you said blocking sucks so you need to dodge a lot.

Usually standing behind an enemy and pressing the attack button (main hand) works to perform a backstab. Something that occured to me a few times: if you just stand behind an enemy and attack, you might be a little too far away or not have the right angle to successfully backstab.
